Salsa Black Bean Burgers

Ingredients:

  • 1 can black beans, rinsed, drained and dried
  • 1/3 cup Neal Brothers salsa of choice
  • 1 large garlic clove, minced
  • 1/4 cup onion, finely diced
  • 1/3 cup Panko breadcrumbs
  • 1/4 cup parmesan cheese, grated
  • 1 egg
  • 1 tsp soy sauce
  • 1/2 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • Big pinch of salt
  • 1/2 tsp black pepper

Burger extras: Mini burger buns, Neal Brothers Garlic Aioli Mayo spread, sliced tomatoes, red or white onion, pickles, mustard, etc.

Oil, for frying

Directions:

  1. Preheat oven to 400°F. Place black beans in an even layer on a parchment-lined baking sheet. Bake for 10 minutes.
  2. Add dried beans to a large bowl and mash with a fork or potato masher.
  3. Use a rubber spatula to mix in the remaining burger ingredients until well combined.
  4. Use a small ice cream scoop (or two spoons) to portion out slider-sized patties on a parchment-lined baking sheet. Shape each patty with wet hands.
  5. Heat oil in a medium-size pan over medium heat. Add patties to the pan and cook on each side for 4 minutes.
  6. Assemble burgers with your desired toppings. Enjoy!
