Triple berry energy bites

These little juicy bites are not only bursting with fruit flavour, but they are full of fibre and omega-3 fatty acids proven to increase energy. A great mid-afternoon pick me up with a hot cup of tea!

Ingredients:

1- 113g package of Fruit d’Or Organic Dried Triple Berries

1 cup of Earth’s Choice Organic Shredded Coconut

2 tbsp. of chia seeds

1/2 cup of whole walnuts

Directions: 

Place dried triple berries into a bowl and cover with hot water. Let sit 10 minutes, drain water and put into a food processor. Add in all other ingredients and pulse until a very fine crumb mixture forms.

Measure out 1-2 tbsp. portions and roll into a ball shape. Place on parchment paper to set.

Store in an air tight container in the fridge or freeze for longer. Enjoy!

Perfect recipes to celebrate Cinco De Mayo or for any occasion where food is what’s bringing your family and friends together!

NB Pollo Con Arroz Verde

Serves: 6

Prep time: 25 minutes

Cook time: 30 minutes

2 tbsp. vegetable oil, divided

3 lbs. skinless chicken (legs & thighs)

1 onion, finely chopped

I carrot, minced

1 stalk celery, finely chopped

1 cup (250 mL) short grain rice

1-1/2 cups (375 mL) chicken broth

1 jar (450 mL) Neal Brothers Tomatillo Salsa

 Garnishes:

Avocados, diced

Green onions, minced

Cilantro,chopped

Lime wedges

Neal Brothers Extremely Tasty Tortilla Chips & Corn Salsa.

Heat 1 tbsp. (15 mL) oil in large Dutch Oven pot over medium high; brown chicken in batches; set aside.

Add additional 1 tbsp. (15 mL) oil; sauté onions, carrot and celery for 5 minutes or until onion is soft; stir in rice. Return chicken and drippings to Dutch oven and add broth; bring to boil, reduce heat cover and simmer 15 minutes, or until broth is absorbed.   Gently stir in  Neal Brothers Tomatillo Salsa.  Simmer 5 minutes. Serve with diced avocados, green onions and Neal Brothers Extremely Tasty Tortilla Chips and salsa.

Lightened-Up Guacamole

Serves: Makes 3 cups

Prep Time: 5 minutes

2 large ripe avocados, peeled, pit removed

1 jar (450 mL) Neal Brothers Tomatillo Salsa

1/4 cup (50 mL) fresh cilantro, chopped

1 bag Neal Brothers Extremely Tasty Tortilla Chips

Place avocados and tomatillo salsa into the blender container. Cover and PULSE on MEDIUM or LOW until chopped finely or to desired consistency- add cilantro, pulse twice then transfer to serving bowl. Serve with Neal Brothers Extremely Tasty Tortilla Chips.

NB Hacienda Dip:

Makes: 4 cups (1L)

Prep time: 5 minutes

1 19 oz can pinto beans, drained and rinsed

1 19 oz can black beans, drained and rinsed

1 red pepper,finely chopped

1 (450 mL) jar Neal Brothers Habanero Salsa

1/4 cup (50 mL) fresh cilantro, chopped

In large bowl, combine all ingredients. Serve with Neal Brothers Extremely Tasty Tortilla Chips.

Tip: Lightly mash Habanero Bean Dip as base for NB Mexican Layer Dip

A “Kick Ass” Mocha

Here at the Neal Brothers office we love our coffee! You could call some of us “coffee snobs” as we only drink the best of the best. Sometimes it can be difficult to choose between the 13 varieties we have here but all are organic, fair trade Arabica beans, slow roasted to produce incredible flavour. From dark and full bodied to light and fruity, once you taste Kicking Horse coffee you won’t want to start your day with anything else!

Today we needed a little extra kick in our coffee and what better way than to add some deep fudgy chocolate! To make this mocha we chose our favourite dark roast – Kick Ass, TCHO’s drinking chocolate crumbles and Pacific Food’s sweet and creamy almond milk. This combination will perk you up in just one sip!

To start the mocha process we brewed a perfect pot of Kick Ass coffee.

Meanwhile add 1/2 cup of vanilla almond milk to a small sauce pot and bring to a low simmer.

Once the milk simmers, whisk in 4 tbsp. of TCHO drinking chocolate crumbles until dissolved.

Divide the chocolate and milk mixture evenly into 2 mugs.

Pour hot coffee over the chocolate mixture.

For a simple finishing touch, grate some fresh nutmeg on top. You could also top with whipped cream and chocolate shavings, or stir in some natural date syrup for more decadence!

I paired mine with Gaga’s gluten free shortbread cookies for dipping!

Green Eggs and Ham

These mini omelettes are full of protein, and fresh green flavours! They are an inexpensive make ahead for breakfast on the go, or a quick meal during a busy week.

To give these omelettes a punch of bright flavour I whisked in Neal Brothers Tomatillo salsa. This isn’t your average tomato based salsa! It has a deliciously tart taste with hints of jalapeno pepper and natural sweetness.

Ingredients: (Serves 3)

6 free-range eggs

1/3 cup of chopped green onion

1/3 cup of chopped or fresh cilantro

1/2 cup of Neal Brothers Tomatillo salsa

1/2 tsp. of sea salt and pepper

3 large slices of all natural deli ham

You will need a mixing bowl, whisk and a muffin pan

Start by pre-heating your oven to 350º and prep all ingredients ahead of time. Crack eggs into a large mixing bowl. Add in the salsa, chopped green onion, cilantro, salt and pepper. Whisk to combine. You can also blend the green onion, cilantro and salsa in a blender first if you want a finer texture.

Prep your muffin pan by lightly greasing 6 cups with oil. Slice each piece of ham in half and arrange in the muffin pan to cover the bottom and around the sides of each cup.

Evenly distribute the egg mixture into each ham cup filling almost to the top.

Once filled, pop into the oven and bake for 20- 23 minutes. Let cool completely, serve with more salsa, a light salad or slice of crusty bread!

Mexican Mac & Cheese Gratinee

Spice up the traditional Mac & Cheese with a little Jalepeno pepper cheese. Add Neal Brothers Corn Salsa, Crushed Sweet & Smoky BBQ chips & Organic Blue Tortillas with Flax Seeds for a flavour combo that will make your guests say ole.

Prep time: 20 minutes

Bake time: 30 minutes

Serves: 6

 

Ingredients:

1/4 cup all-purpose flour

4 cups cold milk (3.5)

4-1/2 cups shredded jalepeno Monterey Jack Cheese, divided

6 cups cooked elbow macaroni noodles

2 cups  Neal Brothers Corn Salsa

1/2 cup Neal Brothers Sweet & Smoky BBQ chips, crushed

1/2 cup Neal Brothers Organic Blue Tortillas with Flax Seeds, crunched (extra for serving)

Directions:

In medium saucepan whisk flour into cold milk until smooth; bring to boil over medium-high heat stirring constantly until slightly thickened (about 10 minutes).

Remove from heat, stir in 4 cups jalepeno cheese until melted and smooth. Stir in macaroni. Transfer to 2 litre baking dish; top with Neal Brothers Corn Salsa and 1/2 cup cheese then crushed Neal Brothers Sweet & Smoky BBQ Kettle Chips

Bake at 350F for 20 minutes or until cheese is melted and bubbly.

Serve with Neal Brothers Organic Blue Tortillas with Flax Seeds.

Maple Bacon Chicken Skewers

This is about as easy as it gets having the dip incorporated into the dish. These skewers are “Flavour Junkie” approved.

Having a big party? Make them into nuggets and use fancy toothpicks for serving.

Prep time: 15 minutes

Bake time: 20 minutes

Makes: approximately 8 skewers

 

Ingredients:

1 lb. boneless skinless chicken breasts

1/4 cup Neal Brothers Creamy Caesar

1/4 cup minced parsley

1 bag Neal Brother Maple Bacon Kettle Chips

8-10 skewers

Directions:

Preheat oven to 400F.

Slice chicken into 2×2-inch pieces.

In medium bowl combine chicken and Neal Brothers Creamy Caesar. Open bag of Neal Brothers Maple Bacon Kettle Chips and enjoy a handful taking you back to your childhood with the aroma of bacon wafting from the kitchen window…snap back into reality and add minced parsley to bag, shaking rigorously and crunching well; transfer to shallow dish.

Thread 3 pieces of chicken onto skewer and press into chip mixture; transfer to parchment-lined baking sheet and bake for 15 minutes or until golden and fully cooked.

Ingredients:

  • 2 cups of chopped mixed lettuce, romaine and arugula
  • 1/4 cup chopped tomato
  • 1/4 cup red onion
  • 1/2 avocado
  • 1/4 cup mashed black beans
  • 1/4 cup blended sprouted tofu
  • 1 large handful of Neal Brothers organic blue tortillas
  • 1/2 lemon

Directions:

  1.  Place lettuce on a large plate.
  2. Top with tomato, onions, avocado
  3. Place a scoop of black beans, sprouted tofu on side of plate
  4. Line the other side of the plate with Neal Brothers Corn Chips.
  5. Squeeze 1/2 lemon on top of it all and enjoy!
