RECIPE: Corn Salsa Meatloaf
The flavours of Neal Brothers savoury croutons and vibrant corn salsa are all you need to add zip to a family classic.
- 1lb (454 g) extra lean ground sirloin
- ½ cup (125 mL) Neal Brothers Parmesan and Pepper croutons crushed
- 1 cup (250 mL) Neal Brothers Corn Salsa
- 1 egg lightly beaten
- ¼ cup (60 mL) finely chopped flat leaf parsley
Preheat oven to 350°F (180°C)
In a bowl,combine sirloin, croutons, ½ cup (125 mL) of the salsa, egg and parsley. Stir just until combined. Do not over mix it or will become tough.
Press sirloin mixture into a lightly greased 9 x 5 inch loaf pan. Spread salsa in an even layer over loaf. Bake in the centre of preheated oven until cooked through, about 50 minutes.
Transfer to rack and cool 10 minutes before slicing.
