This dip marries a few of our favourite Neal Brothers products. We hide almost a full head of cauliflower in delicious Neal Brothers Classic Mayo, caramelized onions, and sweated spinach. With football season right around the corner, this one is sure to please the neighbours!
- Neal Brothers Blue with Flax Tortilla Chips- 1/2 Bag
- Neal Brothers Maple Bacon Kettle Chips (not pictured)- 1/2 Bag
- Nonna Pia’s Balsamic Reduction (we use Garlic)- 1 Tbsp
- Sea Salt- 1 Tbsp
- Olive Oil (not pictured)- 1 Tbsp
- Spinach- 2 Cups
- Cauliflower- 1/3 Large
- Onion- 1 Small
- Neal Brothers Mayonnaise (Classic)- 1/2 Jar
Step One- Heat oven to 350F. Line pan with tin foil, cut cauliflower in half. Place cauliflower on tin-foiled lined pan. Rub with olive oil and sprinkle with sea salt. Place in oven for 10 minutes or until soft.
Step Two- Cut onion, place into pan with Nonna Pia’s (Garlic) Balsamic reduction and cook until soft and a bit charred (refer to photo).
Step 3- Remove onions from heat, place spinach in pan, sprinkle with salt. Watch carefully and remove when wilted.
Step 4- Remove cauliflower from oven, rice using a cheese-shredder or place into food processor.
Step 5- Place cooked vegetables in fridge for at least 30 minutes.
Step 6- Mix all cooked vegetables into Neal Brothers Mayonnaise (Classic).
Step 7- Enjoy with Neal Brothers Maple Bacon Chips and Neal Brothers Tortillas Blue with Flax!
